PUMPKIN MUFFINS
2 servings

The consistency of these muffins is slightly different from the classic ones. Very moist and super soft, where the secret ingredient is pumpkin.

INGREDIENTS:

60 g - grated pumpkin or zucchini
2 handfuls - blueberries
2 tbsp - coconut sugar
65 g - raw buckwheat flour
25 g - almond flour
2 tsp - chia seeds
1 tbsp - coconut oil
150 ml - Fermentful original kefir
1/3 tsp - ginger powder
1/4 tsp - cardamon

INSTRUCTIONS: 

  1. blend all ingredients together until super smooth consistency

  2. bake for 20 minutes at 180-190C

  3. serve with fresh berries
