COLD KEFIR SOUP (4 servings)

Beetroot kefir cold soup is quick and easy to make. Perfect for a light and nutritious warm-season lunch.

INGREDIENTS:

250 g - grated beetroot 

1 pc - avocado

2 pcs - medium cucumbers

10 pcs - radish

750ml - Fermentful original kefir

1 tbsp -  mustard

2 tbsp -  horseradish

1½ tbsp - fresh lemon juice

spring greens

salt and pepper to taste

lightly roasted seeds (hemp seeds, sesame seeds, pumpkin seeds)

INSTRUCTIONS

  1. in a bowl mix together chopped beetroot, avocado, cucumbers, radish;

  2. add Fermentful kefir, mustard, horseradish, salt, pepper, and fresh lemon juice;

  3. mix well and refrigerate the soup for an hour before serving;

  4. garnish with spring greens and roasted seeds.
